After more than a year of installation, commissioning, and trial operation, the intelligent brewing project of Jiangsu Hengshun Group's annual production of 100000 tons of yellow wine and cooking wine has met the design requirements in all indicators and has been officially delivered to the customer for use. This project is based on the traditional production process of Huangjiu, and our company has absorbed advanced production technology and equipment from the alcohol industry. We have innovatively integrated the advantages of two processes, introducing the crushing, liquid saccharification, fermentation processes and equipment from alcohol production into the Huangjiu production process, and optimizing them according to the characteristics of Huangjiu production, replacing the traditional steaming process. This process has the following main characteristics: firstly, it has a high degree of automation, from automatic rice discharge, automatic metering, automatic slurry mixing (material water ratio self-control), automatic spray liquefaction to liquefaction temperature, saccharification temperature, yeast culture temperature, fermentation temperature control, and automatic addition of wheat koji. The entire brewing production line only requires 3 times per shift for computer control. An operator, Especially solving the difficult problem of controlling the fermentation temperature of yellow wine in summer production. Secondly, the alcohol yield is high, with over 300% alcohol yield per ton of rice (calculated based on a 15% v/v alcohol content). The third is the high content of amino acids, which is more than 25% higher than traditional steaming rice technology. Fourthly, it has low energy consumption, and all the heat generated during the cooking process is recovered as a heat source for mixing the pulp.
